XAUXA chocolate – unlike conventional chocolates – is made using a rare cold-crafting technique, i.e. during production temperatures never rise above 42°C. Our cold-crafting process preserves cacao’s precious antioxidants and nutritional benefits, while maintaining the richness of its aromatic notes.
Swiss and Belgian chocolates are not cold-crafted, but rather conched, a process whereby the chocolate mass is mixed, ground and kneaded at temperatures that reach up to 90°C. Today, we know that around 430 different flavours disappear from the cacao beans during conching.
XAUXA cold-crafted chocolate has an intense and richer taste that rolls over the palate and lingers longer in the mouth for a memorable chocolate experience.
Our ingredients are organic certified, vegan, gluten free, contain no additives, preservatives or emulsifiers. They also contain no added cocoa butter, only that naturally present in the cacao bean.
XAUXA Chocolate was also perfected with the help of Artificial Intelligence Clustering Algorithms and Natural Language Processing Methods.
