A bold statement of flaming passion: the world’s most precious volcanic pistachios, dark chocolate and unrefined cane sugar are combined at low temperature to deliver a bar initially musky and then, as the flavours of the nuts slowly open up, opulent, buttery and rich.
These are not ordinary pistachios. They grow in the foothills of Mount Etna, Europe’s most active volcano. Since they are harvested only once every two years to improve quality and give resting time to the trees, they are rare. In addition, they are also never irrigated. As a consequence, they display a more intense and richer taste than pistachios from other areas, while the lava-rich soil results in a superbly moist, sweet, fresh and resinous palate, loved by chefs worldwide.
They are so special that they also look different: emerald-green with deep-purple skins, they are as intense in colour as in fragrance.
Pistachios are a smart healthy choice as a plant-based protein solution. High in protein and dietary fibers, they also provide 15% of the recommended daily value of vitamin B6, phosphorus, thiamine, and 20% of copper. Like olive oil, pistachios carry little saturated fat and more polyunsaturated and mono-saturated fats, which help regulate the amount of cholesterol in the blood. They are also an excellent source of protein, antioxidants, and fibre.
